it all, see you again on my blog, here i will again tell you what will do in this day This week is week of mid
practice test in second half, after last week we have followed mid test theory.
Previously, we already had mid group
each. And my group is group of two. In addition, each group only comes on the
scheduled day. Today, at 09.00 my group came to the kitchen just to prepare ingredients.
Last
week, each group had rotational recipe
menu practiced. Our group received rotating recipe 1.2 menu, namely macedoine of
vegetables mayonnaise, mainstrone soup, fillet of dory meuniere, potato au
gratin, glazed root vegetables with butter dressing, choux au qroqueline and
hard roll. Before preparation begins, we do
oneline in main kitchen and get some direction from Chef regarding rules
that apply during mid test. After that, we started to prepare. My group
consists of only 8 people, so each section is handled by 2 people. section am working on today is macedoine of vegetables
mayonnaise.
This
morning we arrived early, at 07.00. Arriving at kitchen continue our work to make dish recipe rotation
1.2. started practice without waiting
for orders from Chef, because did not want to waste time. For Appetizer
section, all preparean is finished, At 10.00 oneline and given direction by Chef about mid
test today. We were told that at 11:00 all the dishes had to be finished, and
at 14.00 we had to clean entire work area and wash used equipment.
After
that, went back to each section. While
in the Appetizer section, my friend and started plopping Macedoine Of Vegetable
mayonnaise. At 12.00, lunch begins. Today we serve 30 dishes, plus 5 servings
for room service. After the restaurant closes, we do general cleaning. After
that, we were rested and continued by eating together. At 17.00 we do oneline
and After that, we went home to each. But before that, i was ordered by the
Chef to clean the office. When finished, i went home.
